Ginger, Turmeric & Cumin spiced Cauliflower Rice Wellness Bowl

Wellness Bowl bursting with flavour, satisfying + ready in under 30 minutes.

INGREDIENTS

  • 1/2 head of cauliflower, chopped very finely (rice-sized pieces) or torn in small bits + blended in Thermo 4 seconds @ speed 4.5.

  • 12 brussels sprouts, chopped in quarters

  • 1/2 white cabbage, finely sliced

  • 1 clove garlic, minced

  • 2 cups kale, thoroughly rinsed and chopped

  • 1/2 tsp turmeric powder or freshly grated

  • 1 tsp each of cumin + coriander seed powder

  • 1 tsp each of grated ginger + chilli flakes

  • 1 tbsp coconut oil

Topping Suggestions

Top with avocado, goats cheese, chopped almonds, spring onions, tamari, walnuts stir fried lightly with raw honey.

METHOD

  1. Heat coconut oil in large pan, add minced garlic and spices + ginger.

  2. Add brussels sprouts, cabbage and fry on med heat for a few minutes.

  3. Add 2 tbsp water and cover with lid stirring every few minutes to steam the vegetables.

  4. When vegetables are vibrant in colour and brussels sprouts softened, add cauliflower, kale and season with salt.

  5. Stir fry uncovered on medium heat folding vegetables in until cooked through. Add more spices, if it needed, and more grated ginger.

  6. When veggies are cooked through divide onto plates adding your toppings.
