Gluten Free Mandarin Cake

I love this recipe by @sweetlaurelbakery a whole foods baking company with my kind of values for creating indulgent and healthy food with no nasties and a body positive perspective.

MAKES 1 cake

INGREDIENTS

  • 3 cups almond meal

  • 1/4 cup of coconut flour

  • 1 1/2 tsp baking soda

  • 2/3 cup olive oil

  • 1/2 cup maple syrup (if you want to enhance sweetness use 1/3 cup olive oil and 3/4 maple syrup)

  • 1 1/4 cup mandarin juice

  • 3 organic eggs

  • 3 tbsp mandarin zest

  • 1/4 cup shredded coconut

  • 2 tbsp coconut sugar


    METHOD

  1. Preheat oven to 170Β°C.

  2. Line a 9-inch pan with baking paper and lightly grease with 1 tbsp olive oil.

  3. Whisk together dry ingredients in a small bowl. Set aside.

  4. In another bowl, whisk eggs, maple syrup, olive oil, zest and juice of mandarins.

  5. Add dry ingredients to wet ingredients and stir well.

  6. Pour batter into prepared cake tin and back for 45 minutes. Cover with a sheet of baking paper halfway through baking. Remove from oven when a fork comes out clean and allow to cool.

  7. Sprinkle with coconut powder sugar by mixing shredded coconut and coconut sugar in a bowl and sprinkling over cake.
