Gwinganna's Apple-Spiced Soul Loaf

I baked this Apple-Spiced ‘Soul Loaf’ from @gwinganna’s cookbook, A Taste of Gwinganna yesterday and the sweet scent of baked apple, cinnamon and nutmeg still lingers through every room in the house tonight. This ‘soul loaf’ is the perfect snack to curl up on the sofa with during the colder months of the year. Warm a slice up in your sandwich press, slather butter overtop and enjoy it with turmeric tea by @loveteaofficial, perfect for its warming and naturally stimulating qualities. Fight the rainy day blues with this sweet + aromatic gluten-free bread.

MAKES 1 loaf, approximately 12 slices.
*Slices can be frozen into individual serves for a quick and healthy snack.

INGREDIENTS

  • 1 cup almond meal

  • 1/2 cup pecans, chopped

  • 1/4 cup sultanas or currants

  • 3/4 tsp bicarb soda

  • 1 tbsp ground cinnamon

  • 1 tsp ground ginger

  • 1 tsp nutmeg

  • pinch of sea salt

  • 5 large eggs

  • 1/2 cup macadamia oil

  • 1/4 cup maple syrup or honey

  • 1 apple, cored, peeled + chopped

  • 1 tbsp lemon juice or apple cider

    vinegar

METHOD

  1. Preheat oven to bake 160°C.

  2. Combine almond meal, pecans, sultanas, bicarb soda and spices in a bowl. Peel, core and chop apple.

  3. Place apple in blender with eggs, oil, lemon juice and sweetener (I use maple syrup).

  4. Blend until smooth and pour over dry ingredients. Stir to combine.

  5. Pour mix into a loaf tin lined with baking paper.

  6. Bake for 45-55 minutes until cooked through and golden.

  7. Cover loaf with a sheet of baking paper for initial 20 minutes in the oven.

  8. Let loaf rest for 5-10 minutes, then remove from tin and place onto a wire rack or plate to cool. Slice to serve.
