LAZY DINNER : Shakshuka

Impress yourself and enjoy this meal as a lazy dinner or weekend brunch!

MAKES 2 servings
PREP & COOKING TIME 25-30 minutes

INGREDIENTS

  • 3 eggs

  • 1 tin of chopped tomatoes

  • 1 clove garlic, finely minced

  • 1 grated zucchini

  • 3 slices Haloumi

  • 1 tbsp maple syrup or kecap manis

  • Spices ~ 1/2 tsp cumin, 1 tsp paprika + chilli flakes

  • Chopped herbs ~ mint, basil and/or parsley

METHOD

Preheat oven to 150’C.

Fry garlic + grated zucchini in a frying pan with 1 tbsp olive oil. Add spices. Mix in tin of tomatoes. Add 1 tbsp your choice of sweetener. Season generously with salt + pepper. Bring to a slow boil then add eggs making three spots for them with a spoon.

Bake in the oven until eggs are cooked to your liking. Garnish with Haloumi (quickly grilled in a sandwich press), chopped herbs, sea salt + pepper.

* Makes 1 generous serve. Use a larger fry pan and add a few more eggs to make 2 servings. Serve with any bread of your liking.
