Healthy Pecan Slice

HIGHLIGHTING AUSSIE PECANS CAMPAIGN

I created this recipe for Pecans Australia with Grapevine PR to inspire influencers across health, fitness and foodies and chefs to get into the habit of using pecan's in their recipes through trial, exploration and information.

The project included:

  • Graphic Design | Creating a branded recyclable mailing box and postcard-sized recipe card on recycled paper.

  • Recipe Creation | Creating an original, novel and accessible Pecan recipe that would inspire influencers to use more Pecans’ in their recipes.

  • Food Photography

Homemade pecan granola bars are packed with protein and healthy fats making it a great go-to snack for sustained energy through the day. This chewy pecan slice can be customised to your liking. Each slice is delicious and topped with a roasted nutty pecan and drizzled with dark chocolate.

MAKES
16 square granola slices in a square baking dish

INGREDIENTS

Dry Ingredients

  • 1 ⅓ cup pecans, coarsely chopped in blender 

  • 1 ⅓  cup rolled oats, finely chopped in blender ¼ cup ground chia or chia seeds¼ cup shredded coconut2 tsp cinnamon½ tsp baking soda½ tsp sea salt

Wet Ingredients

  • 2 bananas, ripe & mashed

  • ¼ cup almond or peanut butter

  • ½ cup maple syrup 

  • 1-2 tbsp almond milk or water to loosen mixture, if necessary.

  • 1 tsp vanilla extract

Topping

  • 12 raw pecans, whole

  • ¼ cup dark chocolate chips, melted 

  • 1 tsp cinnamon

METHOD

1. Preheat the oven to 180°C or 350°F. Line a square cake tin with baking paper.

2. Blend/Pulse rolled oats in a blender/Vitamix/Thermomix at high speed until smooth. Place oat flour in a large mixing bowl.

3. Add pecans into your blender and pulse until coarsely chopped. The more finely chopped the pecans, the smoother the slice will be. Add the pecans to the large mixing bowl.

4. Combine the remaining dry ingredients in the large bowl and mix until fully incorporated.
