No Bake Quinoa + Peanut Butter Bars
INGREDIENTS
10 pitted Medjool dates
1 cup peanut butter
1 heaped tbsp coconut oil
1 tsp vanilla extract
1/2 tsp cinnamon
pinch of salt
1 cup puffed quinoa
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
3 squares chocolate of choice
METHOD
Blend dates in a food processor or Thermomix.
Over low heat in a small pan, melt coconut oil then add peanut butter, vanilla, cinnamon and salt. Add blended dates + mix until fully incorporated.
In a separate bowl, mix seeds together with puffed quinoa*. Add wet ingredients to the bowl and mix gently until well coated.
Line a 20 x 20 cm tray with baking paper and press mixture into it evenly using your hands. Place in the fridge to set for 2 hours. Slice into bars or squares with a sharp knife.
Bring a small pot of water to the boil. Place chocolate in bowl over pot. Melt then drizzle with a tablespoon over bars.
Store in a container in the fridge.
*Puffed quinoa can be found at most grocery stores + health food stores.
