No Bake Quinoa + Peanut Butter Bars

β€œGet these no bake bars into you . 15 minute prep time and 2 hours setting time in the fridge.”

INGREDIENTS

  • 10 pitted Medjool dates

  • 1 cup peanut butter

  • 1 heaped tbsp coconut oil

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • pinch of salt

  • 1 cup puffed quinoa

  • 1/4 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 3 squares chocolate of choice

METHOD

  1. Blend dates in a food processor or Thermomix.

  2. Over low heat in a small pan, melt coconut oil then add peanut butter, vanilla, cinnamon and salt. Add blended dates + mix until fully incorporated.

  3. In a separate bowl, mix seeds together with puffed quinoa*. Add wet ingredients to the bowl and mix gently until well coated.

  4. Line a 20 x 20 cm tray with baking paper and press mixture into it evenly using your hands. Place in the fridge to set for 2 hours. Slice into bars or squares with a sharp knife.

  5. Bring a small pot of water to the boil. Place chocolate in bowl over pot. Melt then drizzle with a tablespoon over bars.

  6. Store in a container in the fridge.

    *Puffed quinoa can be found at most grocery stores + health food stores.
